Vanilla Cake with Vanilla Buttercream Frosting: 2 ½ cups flour 1 tablespoon baking powder 1 teaspoon salt 1 cup (2 sticks) butter, softened 1 ½ cups granulated sugar 4 teaspoons pure vanilla extract 4 eggs ¾ cup milk Vanilla Buttercream Frosting: 1 cup (2 sticks) butter, softened 2 teaspoons pure vanilla extract 1 package (16 ounces) 2 tablespoons powdered sugar milk For the cake, combine the flour, baking powder and salt in large bowl. Set aside. Beat butter in a large bowl with electric mixer average of 30 seconds or until soft. Add sugar and pure vanilla extract, beat until light and fluffy, scraping sides of bowl occasionally. Add eggs to medium-low speed until blended. Either the flour mixture and milk just until blended. Spoon into greased and flour 13x9-inch Baking Dish. Bake in preheated oven at 350 degrees 30-35 minutes or until toothpick inserted in center comes out clean. Cool completely on a wire rack. For the icing, Bate butter in a large bowl with electric mixer at medium speed until light and fluffy. Add pure vanilla extract, mix well. Slowly than sugar glas, beating well after each addition and scraping sides frequently and bottom of the bowl. Add milk, beat well. Spread in an even layer on top cooled cake. Makes 24 servings. Red Velvet Cake with Vanilla Cream Cheese Frosting: 2 ½ cups flour ½ cup cocoa powder 1 teaspoon baking soda ½ teaspoon salt 1 cup (2 sticks) butter, softened 2 cups granulated sugar 4 eggs 1 cup (8 ounces) sour cream ½ cup milk 1 bottle (1 ounce) red food color 2 teaspoon vanilla Vanilla Cream Cheese Frosting: 1 package (8 ounces) cream cheese, softened ¼ cup (1 / 2 stick) butter, softened 2 tablespoons sour cream 2 teaspoons vanilla 1 package (16 ounces) confectioners' sugar Sift flour, cocoa powder, baking soda and salt, set aside. Beat butter and sugar in a large bowl with electric mixer on High Speed 5-7 minutes or until light and fluffy. Beat in eggs, one at a time. Mix sour cream, milk, food red and pure vanilla extract. Little by little the flour mixture on low speed until blended. No Overbeat. Pour batter into 2 greased and floured round Cake Pan 9-inch pie. Bake in preheated oven 350 degrees 35-40 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes, remove from pans. Cool completely on wire rack. For the icing, beat cream cheese, sour cream and butter in large bowl until smooth. Mix pure vanilla extract. Gradually beat powdered sugar in the medium speed until light and fluffy. Fill and frost cake layers with frosting. Makes 16 servings.
